CHÊNE BLEU

This boutique winery produces small batch, critically-acclaimed red, white and rosé wines at its medieval estate in the South of France. It has pioneered cutting-edge organic, biodynamic, sustainable and bee-friendly principles of regenerative viticulture. Nicole and her husband, Xavier Rolet, are ardent conservationists with a deep respect for nature. They guide all aspects of Chêne Bleu’s sustainable vineyard practices. Since its inception, chemicals and synthetic fertilizers have been replaced with natural techniques. The owners are driven by the principle of “balance and harmony” – where the winery, its people and nature remain in healthy, sustainable equilibrium. The 9th-century priory on the property, La Verrière, operates as an award-winning eco-luxury guest house, wine tourism destination and wine school.

LE ROSÉ TASTING NOTES

Fresh and elegant, yet structured and sophisticated, Le Rosé 2022 is a remarkably complex Grenache-Mourvèdre-Grenache Blanc blend, showcasing white fruit and redcurrant aromas with a floral touch. Importantly, it is made with an innovative direct-press technique, not by the traditional saignée method, in order to reveal the full-bodied texture and character of the grapes and give it remarkable length, elegance and aging potential.

Nicole Sierra Rolet

Principal, Chêne Bleu Winery
and La Verrière Eco-Luxury Estate

Nicole left her career in international finance and David Rockefeller’s geopolitical think tanks to join her husband, Xavier, and his family in the Rhône to restore a historical vineyard and its abandoned Medieval priory – a hidden gem in the heart of a UNESCO biosphere. Increasingly convinced of the site’s exciting potential to produce Grand Cru-quality wine, she studied at WSET then UC Davis and called upon her inner entrepreneur to transform this medieval Sleeping Beauty into a cutting-edge wine estate. Chêne Bleu wines were launched in 2010 to critical acclaim. She remains deeply committed to reconciling business success, social responsibility, as well as ethical and sustainable practices. Nicole was knighted as Chevalier de Tastevin in Burgundy and the Echansonnerie in Châteauneuf-du-Pape, is a board member of the Yale Sustainable Food Program and is founder of a think tank, Fine Minds for Fine Wines.
